I'd say it's mostly around 4 key bits

better screen tech (FPS, PPI)
better camera tech
better support (version updates) which affects it's longevity
processor / ram (which, depending on your use, can affect how good it is)

That being said, you can bridge that if you're willing to go for a lesser brand (such as oneplus, nothing / CMF, xiaomi (although I don't like how they restrict capabilities in their phones and insert ads).

The other last bit is ecosystem. Both apple and google retain a lot for their own phones (apple of course because only they can) which plenty of people want / have become used to.

Ultimately it's a choice on what you perceive you get from the device. Also it's not really unique to phones. can be said for all electronics really.
