Because

the acts of unions saw the UNITED kingdom recognised. England and Scotland are seperate countries forming this union. Its also fair to argue that England is the dominant/senior parntner. Wales however is simply a principality as we absorbed them politically in the 13th century.

You ARE English, but are part of the united Kingdom.
