Can't think where I read it, but some online recipe writer suggested chopping up pickled onions into mayonnaise to serve in a fish finger sandwich and I can confirm, after trying this approach yesterday evening, albeit just as a side as we had fish fingers outside a sandwich environment, that it is 'chef's kiss' superb.
