it adds tang and thins the sauce down so it is less prone to burning

and when i say tang i mean TANG with a capital TANG also gives the meat a nice glazed appearance and we eat with our eyes so they say. for added ponce, make a brush out of herbs and slather it over pulled pork before giving it the final coup de grace over the coals. zing!
