FWIW, if you're doing it at a hotel, (am using Dunston again as I have the experience of it) get the bride and her bridesmaids to stay there the night before - not only will the rooms be cheap as they'll do you a deal, but there's a beauty salon on site for the hair / make up and you won't need bridal cars etc.
I can get you details of photographers / videographers who will probably offer you discounts (the videographers will) but will be fairly reasonable anyway. Believe me, having got married twice - first time my brother did the photos, second time we got someone in for the day - I would pay the expense of getting someone in every time. You want to be proud of your wedding photos in years to come - an amateur doesn't give you that.
We got our rings from the jeweller next to Captain Americas for ?125 each.
Regarding drinks, my f-i-l paid for champagne straight after the ceremony, and for drinks with the meal (the hotel tends to offer different packages). After that, the bar was open.
Best bet is to decide on your venue, then haggle with them to see what you can get included. Don't ask, don't get - and they'll be making a hell of a lot of money off you so won't mind being a little flexible. You can always walk away, or play two off against each other to get the best deal for you.
