It’s so versatile, really an incredible thing.
Anyway, you’re bang on that the key to bbq is to be able to control temp. Doesn’t really matter what you’re cooking with so long as you can do that. And a decent set of thermometers is a necessity 👍
If you want to do some beef, I’d thoroughly recommend beef short ribs and ox cheek. Both very tasty, cook much quicker than brisket. Cost a lot less to if it goes wrong!
