Tim's special haggis pie + Arran single malt = happiness

Make some cheesy mash. Really cheesy.

Fry up some haggis until caramelised (brown)

Sauté some mirepoix (get onion, carrot and celery and fry it until it is soft)

Pour half a bottle of wine into a pan, boil off the alcohol and then add some balsamic vinegar.

Put haggis, mirepoix and wine reduction in oven dish and top with the super-cheesy mash.

Put in oven until mash browned.

Best comfort food ever IMHO.

I am normally an islay malt man but Burns is more closely associated with the Isle of Arran. Arran Amarone cask scotch definitely worth a try. :-)
