Welsh rarebit is excellent

But not cheese on toast.

Another wonderful variant my dearly departed father must be thanked for.

Toast one side. Thick strong cheddar on untoasted side. Grill until cheese starts to melt. Remove from grill. Layer every available surface (particularly around the edges to prevent burning) with thinly sliced cherry tomatoes. Put all of the excess tomato juice + slicing remnants in the middle. Grill until tomatoes are browning.

Add a bit of Worcester sauce to the tomatoes before grilling if that's your thing.
