My basic method is to grate some cheese, chop some onion, mix in with an egg and whatever else takes my fancy eg Bertie Wooster sauce or tomato purée or harissa or whatever
Then I smear it on unbuttered bread and grill
Now - (a) do you toast the bread before grilling? (I don’t) (b) do you butter the bread/toast (I don’t) (c) any tips for improving the basic mix?
