It was a bit like an extension of how we were defending further up the pitch.
My (hazy) recollection is that players worked in triangles with one always available to press and another couple to back up/mop up.
Culverhouse used to tidy up and provide some passing out from the back, allowing polsten or Newman to go break up play or tackle without leaving as much of a gap.
