Well because they ask people how they actually voted and

They ask 20,000 people rather than 2,000 and they do it at a cross section of 144 seats.

They then adjust it in ways I don’t really understand but it’s clear it’s pretty accurate although I think tactical voting may mean it’s a little bit out. It would have to be massively out though for the tories not to have a big win.
