(from the Castle down to Holyrood) and take in the atmosphere of street performers and old wynds and higgledy piggledy streets and buildings. (Alternatively they may prefer the New Town - there's a great NT Georgian house they can explore in Charlotte square). They could take in a tour - there are loads to choose from - book tour, ghost walk, history of Edinburgh, open top bus tour etc.
For a bit of fun, the camera obscura up near the castle is excellent. I also thought the tour of Britannia down in Leith was fascinating (and you get to see the queen's bed!)
If they're outdoorsy they might enjoy a walk up Carlton Hill or if they have more energy, up Arthur's Seat.
There are plenty of (free!) galleries and museums. (The national museum of Scotland is fab for example). Lucky them! I'll be there in a few weeks! :)
