They couldn't possibly play a 31 game season, let alone 62. They'd all be

dead after one year. They're already playing the last few games held together with sticky tape before off season rehab.

Imagine it like the champions league group stage, then extended a bit. They play the other three teams in their division home and away, and the other ten games are made up as you suggest. In theory, the other ten games are also decided based where you finished the season before so theoretically the Super Bowl winner will have the hardest schedule, and the Cleveland Browns (for it is usually they) would have the easiest. Obviously doesn't always work out that way overall because you might be in a tough division.
