take-aways put whole onions and a bit of veg in massive pans and leave it for an hour or so to boil.

The onions go soft and fall apart when ready. It is better to boil them for too long than not long enough.

Oh... put in some coriander stalks to boil with the onions, bit of white cabbage, carrot and peppers. Could chuck in a bit of potato too. It should be about 80% onions. Don't drain off the water. Liquidize the lot. You can freeze it and use as the base for lots of curries.

Then when you make a curry. start with ginger & garlic, chilli powder, spices, bit of tomato puree, a chopped tomato, then add a ladle of the base sauce.
