DVD Shrink (if you can get hold of a copy) and DVD Decrypter are the two...

Shrink lets you decide how much of the disc you want (remove all the other language options, for example) and compresses the rest to fit on a standard 4.7GB disc. Obviously, the less it has to compress, the better the quality.

Decrypter then burns it.

I think Shrink has been withdrawn though.
