Tosta de tomate
Learnt on my hols in Spain. I never found the same bread rolls here but you can mix it up with whatever you like but something like a ciabatta roll works pretty well...
1. Chop raw tomatoes in half and grate (yes) using a cheese grater, extracting all the juice and pulp until you reach the skin (of the tomato, not finger). The skin is very robust so this is easier and safer than it sounds. Do plenty so you don't run out later.
2. Cut your roll in half and grill to taste.
3. Take a teaspoon and pierce the flat surface of the roll in several places.
4. Drizzle quality olive oil across the surface of the toasted roll.
5. Then spoon plenty of tomato over the top.
6. Grind the best salt you can get over the top, to taste.
7. Eat and change your breakfast forever...
Even my kids, who aren't that into tomato normally, love this...I recommend preparing everything first and eating as soon as you get it out of the toaster, so your bread is nice and crusty.
