do a trout with a little unsalted butter and black pepper under the grill or in the oven. When making an omelette, towards the end put some bits of trout in it as the filling.
I got the idea whilst in Morrisons. They had some trout fillets and I wondered what to do with em. I then thought 'I've not had an omelette for years. Ummmm I could try trout in an omelette'...... It's great!
