Roll out and stretch the dough to a rough circle

Simmer a tin of tomatoes with a clove of garlic, some basil and a red chilli for half an hour to reduce then smear that on top, add thin slices of mozzarella and whatever else you fancy, stick it in as hot as your oven will go for about ten minutes.

Wait - that *is* a flan, right?
