In the books they speak (a very, very few words, usually "Corn" when they want feeding, once "Snow", that's about it) but they know how to find people so are used to carry messages - which saves time and allows the plot to develop at its own pace. It's obviously an artificial device but it's so well written you just kind of accept it, like many of the fantasy tropes in the show. Fantasy is not a genre I really enjoy or read much; I've surprised myself by how much I've enjoyed the GoT books. But then I don't really like historical fiction all that much but couldn't put down "This Thing Of Darkness" (Harry Thompson, if you haven't read it, get a copy from the library) etc etc - really good writing transcends genre.
