.. and interviewed many, but none were quite right for us. Beforehand I did a lot of research on the employment side of things, and came to the conclusion that going through an intermediary would be a lot less hassle (albeit somewhat more costly).

If you are drawing up your own employment contract then there is a LOT to consider:

Your best bet might be to ask the Nanny if they've worked with such companies in the past -- they may well have a recommendation.
