he's been here for years now and I still don't know what his role is

No-one else seems to either, since he's been played both as a defensive midfielder and (as yesterday) as an attacking one at various times.
He doesn't strike me as Prem quality at either - he's a likeable above-average Championship all-rounder who doesn't have any pace, doesn't score many goals, get many assists or make many tackles. He's just technically quite neat and industrious and will always give you 100%. Not sure that's enough at this level.
