There's a piece called African Sanctus by a British composer called David Fanshawe

Basically takes the Latin Mass and sets it against songs he recorded travelling through Africa. The Kyrie is set against just such a call to prayer (from Cairo I think) and is one of the finest pieces of the work (im oh so h o)
