sharp liquid with lots of pectin, you add blended chillies, sugar and cider vinegar and lemon zest and juice. You don't stir as it will go cloudy but wait til it starts to set and the chilli bits are suspended throughut the liquid. It's great with cheese or meat or stirred into chillis, stews or even on toast.
