I do go for a bit of buttery sweating if I want to make it ultra. I've also got an even simpler one - butternut squash, good glug of thai red curry paste and a tin of coconut milk. Mush that up and it's lovely. Again bit more stock if it's thicker than you like.
And if you want a change from carrot and coriander, try carrot, pear and ginger.

I might write a soup book.
