Leave it outside in the open air for an hour or two - it will gather natural yeasts. Stick some yoghurt in if you want to. Leave alone two days, feed every other day after that (mix up the flours - some spelt, some Tescos Value, some whatever, cheap flours can add good flavours as much as dear ones), ready to raise a loaf in about two weeks. Then mix 2 parts new flour and water to one part starter, split that into two, let half prove 12 hours and bake it and the other half is your starter next day.
It's delicious and you don't have to be a hipster t**t to make good bread.
