Id advise to to one of the hotels that gets you into one of the big water parks. Either:

1. Jumeirah Beach Hotel / Burj Al Arab -> Wadi Wadi water park

Or

2. The Palm Atlantis -> Atlantis water park

They are both nearby beaches but the water parks give you a chance to cool down without having to go in the sea and they are a good laugh too. If you wanna chill out, just sit in a double ring with the missus and float round and round the endless river ride.

I'd also recommend the Dubai museum in the old fort. Its small but cheap and is a bit of history in diorama form and is a quick boat across the creek from the souks.

Don't pay more than a dirham to cross the creek, just get on the same river taxis as the locals. They leave as soon as they are full.

I wouldn't bother with the Burj Khalifa, unless it is a super clear day. Its normally too hazy to see much. If you do wanna go up, book online ahead of time and they give you a time slot, if you bowl up and try to go up there and then, its about thrice the price.

The Lebanese restaurant in Jumeirah Beach Hotel is excellent, as is their breakfast. The underwater restaurant in the BAA is excellent too, as is their sky bar.
