Dubai has been ruined from what it was 10-15 years ago - in my humble opinion.

I would hire a car at Dubai airport and drive across the peninsula to Hatta (about 90 mins drive) and stay at the Hatta Fort Hotel or go on to Fujairah and stay at one of the luxury beachfront hotels there.

Oh and don't go in any of the months May-Aug inclusive unless you can withstand 40C+ heat every day.
