Scuse my ignorance Tricky but why do they make folding tyres?

I assume they can be folded to put in a pannier or whatever cos they don't have a wire bead but why would you want to do that. I'd assume one just takes spare tubes, not an entire tyre

A big stone or glass can rip a hole in the tyre wall. Then you're stuffed unless you have
