The main problem is that it tends to do things in DRM-protected proprietary formats (Particularly if you bought the track off Itunes) and it's a bastard to use. I have a Sony MP3 player and use SonicStage, which is a piece of piss to use and lets you convert formats easily.
About the best way to convert Itunes stuff to open-use is to burn it onto a CDRW (As you are trying to do) in .cda format, then use Media Player or something like CDEX (Much better encoding) to re-create your music in .mp3 or .wma. The problem is that this is a very time-consuming way of doing things!
