fresh I mean on the spot. Very hard to find. In fact after going to s**tloads of top notch, pretty good, average and OK restaurants in Rome, Venice, Verona, Trentino, Florence, Milan, Lago di Ledro etc I only found it once on the Italian mainland, in Verona.
(On the mainland - much easier to find in Sardinia and Sicily).
You taste the difference immediately. Almost melts in your mouth.
