chicken thighs filleted and marinated overnight in lemon juice, garlic and olive oil then roasted; pour the fat in the paella pan and fry off the chorizo, take that out of the pan and put in the red onions and peppers and garlic with grated zest of two lemons, soften, two tins tomatoes and reduce a little, add rice, saffron, chorizo, chicken and home-made stock left from when I made the Circassian chicken the other night and the juice from the lemons, cook it up while cleaning off some mussels, chopping up a squid and cheating with pre-cooked prawns (oops), lay them on top for the last ten minutes with some freshly chopped parsley and Old Man Is The Daddy. Fuck yeah.
