free range egg etc.
It wouldn't really be a scotch egg, but I think I'd like a kind of deconstructed one served warm but with a poached egg instead off a hard boiled one, that when you cut into it the warm yolk runs all over the sausage meat and crispy breadcrumbs.......... the thought of that sounds very appealing!
