Theoretically...

Goes back to hunter gathering - lots of meat & fish (protein & "good" fat) & berries & other foraged veg/fruit. Then came farming and corn, milk, etc. And some say that we haven't evolved to properly digest all those carbohydrates and "bad" fats so now we're all sedentary as well we just get fat and clogged arteries.

But in general, veggies miss protein a bit; but that can be got from other sources. Iron's the biggie though (and why the stereotypical veggie looks anemic) and that's not so easily found in the vegetable world so often you need to take supplements. Or pig out on raw liver from time to time.
