If picking earlier than this, just give them a little squeeze - if they're hard like little bullets, wait a bit. They should yield just a little bit when squeezed

Top tip - freeze them for at least 24 hours before using! Micro-fractures the skins and lets the juice out, and infinitely easier than pricking them!
