The game is usually won and lost in midfield these days

Hence teams rarely playing two out and out strikers. People still think that the answer is just always to throw more strikers on, and sometimes it is, but in a lot of situations, as you say, it leaves the strikers starved of the ball as the other team's midfield then dominates.
