That it would leave us over exposed at thw back which is still a risk with 3 5 2. However the feeling would be with three at the back the the third centre half pulls wider giving more coverage. If you've only got 2 at the back and still push your full backs as high up the pitch you end up like Villa, whuch whilst exciting to watch leaves yiu really vulnerable. Also with just 2 at the back you'd find the player in front of the back 2 becoming ineffective, as more often than not they'd be fulfilling defensive duties as either an auxiliary centre half or full back. Just my thoughts.
