I hate when I don't have them.

At the moment I have XCode on one screen then Parallels on the other screen which has SQL Management Studio and Visual Studio open on it. That way I can switch between the iOS app I'm working on and the database service that feeds it easily. Plus having windows on it's own screen helps give me a separation between OSX and Windows. Meanwhile my laptop screen is playing a podcast.
