They do that because it's impossible for them to do any other job
The services are perfect for them because there's a clearly defined structure and hierarchy. Everyone knows where they stand. Harry's men can obey him without feeling that they're kowtowing to a prince - he's their officer. Harry's colonel can bollock him without awkwardness on either side - he's the superior officer.
It's impossible to translate that into most civilian structures, so the poor buggers have little option. When it doesn't work out for them (like Edward and the marines) they're a bit bereft.
