Lots of Chinese people *are* lactose intolerant. Most, I think. It's only a freak genetic mutation, which can be tracked down to an event somewhere around what's now Turkey that the branch of our species that left africa to explore europe, which causes our adult lactose tolerance. There's an evolutionary superiority to lactose intolerance: when infants lose the enzyme that processes lactose at the age of three or four or whatever, they are forced to not use thier mother's milk, meaning that the mother can devote more milk to younger siblings, without older ones competing. Darwin wins.
