Pre-heat oven 200 degrees.
Cover potato in olive oil and then salt-makes skin very crispy (I hope you aren't one of these people who doesn't eat the skin?) then lob her in on a baking tray for about an hour, hour and 20 minutes.
It's done if you can slide a knife in and out without any resistance.
Bloody lovely. Me and Mrs MP are having one tonight, tuna, baked beans and grated cheese. Mmm-MM!
