% of possession doesnt mean much if a lot of that possession doesnt hurt opposing teams (back 4 and midfield ole's!)
That isnt high quality possession.

Also passing % doesnt account for more direct teams.

Stoke are the most direct so often go for the 50/50 or even 40/60 long pass.

Norwich are also somewhat direct based on the number of headed goals so we would expect the opposition to snub out a high % of crosses.
