Yeah, give the veg a bit of a cook in the liquid for 10-15 mins

then whack it in. I would check it after 1.5 hours, should be done in about 2 ish hours depending on the size of your poi.

Are you going to cook it open and add a pastry lid 30mins before end of cooking, or cook it with a lid on from the start?
