if the UK is the same as france (which it should be according to all that EU bollocks), then you can't advertise for a person of a certain nationality because it's discrimination. You can, however (as i think camcan said) look for someone with specific skills, such as, for example 'mother tongue Danish'. One problem i've faced is that locals aren't too happy about being constantly overlooked in favour of aussies or yanks, but if your lucky you can get bilingual person who fits the bill.
Another way to tackle the problem is to advertise the job offer in places where only people of the desired nationality will see it. I always put my job ads up at the international students office at the uni, for example.
Depends what you're recruiting for, i suppose.
