I started my Xmas Ale this week.
It's fermenting in my kitchen as we speak. Dark and strong, spiced with ginger, cinnamon, nutmeg and orange. Nice balance of malt and hops. Used the Guinness strain of yeast for dryness. Should be lovely after a few months in the bottle.
If I won the lottery I would start a small brewery somewhere.
