Dont worry about high ceilings, low ceilings are the problem.
You can always buy a universal mount which allows you to position it at any height.

Given your large room size I would go for at least a 120 inch screen

2 choices........buy something like a manual pulldown..........

Or you can make one yourself.

For sound system, a simple store bought 5.1 subwoofer system is normally a good starter.

Projector.........

The projector you posted is an older model. (2.5 years old)
There are far better and cheaper models now available.

One of the most popular sub $1000 projectors is the Optoma HD20 (called HD200 in canada)
You can pick these up in the US for under $1000

A cheaper option is the Vivitek H1080FD

If you dont need full 1080p the Optoma HD65/66 is agreat buy at under $700
It throws a great picture for the money.

If you suffer from Rainbow effect then the Epson 8350 can be picked up for around $1000.
Its a fantastic 1080p LCD rather than DLP.
This might be the best choice if you cant control the light as its extremely bright at 2000 lumens
