personally I'd prefer to mix the chilli, garlic, lemongrass and ginger to the crab meat the night before, allowing the fusion of flavours to marinate before hand - WHAT a difference THAT makes! Oh, and if you're feeloing particularly cheeky, and want to get your sordid end away with the woman you're cooking dinner for, add a splash of lemon juice prior to frying in garlic oil - you cheeky little scamp!
