You need to marinade your meat in garlic & fresh ginger, garam masala, tandori spice, turmeric & a little bit of chilli powder for at least 24 hours but 48 is great with yoghurt and a little cream.
For the sauce (masala) put ghee into a wok and heat add chopped tomatoes, diced onion, diced chillis, garam masala, tandori masala, cinnamon, tumeric, cook for 10 minutes. Add the meat, with red and green peppers, cook for 15 minutes or so and fresh coriander. Don't forget to cook your rice in turmeric, cinnamon, bay leaf.
Sereve with naan & raita sauce lovely old job.
