Fry diced onion and a sliced leek in Olive oil for 5 mins.
Add finley chopped garlic and celery and continue to fry for 2 mins.
Add 350 ml of fish stock, 150 ml white wine, tin chopped toms, bay leaf, salt & pepper to taste, tom puree, teaspoon of paprika. Simmer covered for 30 mins.
Add a pack of mixed fish (fish pie mix from Sainsburys)
Simmer for 5 mins uncovered.
Add a pack of mixed seafood from Sainsburys (mussels, prawns, Squid)
Simmer for two more mins uncovered.
Serve with crusty bread (or not if you're really wanting low fat)
Lovely.
