depends if you want to limit yourself to the SE - Rio the islands etc, or go up to the NE, which is fantastic, or the swamps in the SW, which are great if you're into wildlife.
You could happily do a 2-3 weeks in Brazil and then move cross country into the real back of beyond, before heading to Bolivia and then into Peru. Either up north, down south or into the jungle. I love Peu, great place.
I wouldn't try and take on much more than that or you'll end up wearing yourself out getting up at dawn to get on buses to try and cram it all in.
I reckon that's how I'd do it personally. I wouldn't try too hard with the volunteering either. Just don't think you have enough time really.
I'd also highly recommend at least learning some basic spanish/portuguese. You'll meet a lot of people of only know a few words of English and it'll make it so much more fun if you can pretty much undertsand the locals. Otherwise you'll be forced to hang out with the Aussie and Israeli backpackers!
