Them's the ones. Seriously though, most of the 'quick' strikers will be young

or at least pretty much settled league 1 standard.
Players like Dejan and Purse, having played at higher levels, will have more knowledge and experience.

That translates into positional sense, into getting yourself (and therefore the striker) into positions that largely negates their speed advantage.
If you can hold a line better than a league 1 striker can, he's never gonna get a run in behind you, he'll be offside.
If you are deeper, you buy yourself a yard or two, and then he won't have enough pitch left to catch and get past you.
